Join us in our outdoor forest kitchen for this unique wood-fired cooking experience which includes a guided foraging walk, game butchery and a fire skills workshop. Guests will then be guided through the process of cooking some of our dishes over the fire using seasonal ingredients such as venison, wood pigeon and wild mushrooms, harvested from the surrounding land.
During this masterclass we break down some signature FIRE + WILD dishes, cooking them with our guests as we discuss, demonstrate and teach many of the traditional open fire cooking techniques used in our off-grid kitchen. These events take place in a private woodland near Lewes, East Sussex.
FIRE SKILLS WORKSHOP
We’ll teach you the basics - wood selection, axe skills and temperature control - and how to manage and maintain a fire for cooking. You’ll learn how to start a fire from a spark using natural tinder gathered from the surrounding forest.
foraging + game butchery
During the foraging walk we’ll introduce you to some of the edible fungi, wild herbs, fruits and berries around our site. Learn how to skin, gut and joint small game, fish or locally harvested wild meat ready for cooking over the fire.
open-fire cooking
Throughout the day we introduce you to many of the wild ingredients we use in our kitchen along with the techniques use to prepare and cook them. You’ll cook some of the courses yourself as well as some of our foraged canapés and nibbles.
