Join us for a guided mushroom foraging walk followed by an outdoor, wood-fired dining experience. Expert mycologist Jesper Launder will lead a guided foraging session out in the Ashdown Forest during which you will learn how to identify many species of edible and medicinal fungi.


 
 
 
 

Discover how to forage responsibly and sustainably as we make our way through various habitats from open grasslands to mixed woodlands as we explore this Area of Outstanding Natural Beauty. Later in the day we will head to our camp and outdoor kitchen at a private woodland location near Lewes, East Sussex where the dining experience will begin.

Once the fires are crackling we’ll head out on a foraging walk to find some of the ingredients we will need to prepare the menu. Depending on the time of year and what is around this might include edible fungi, wild herbs, fruits and berries. Learn how to skin, gut and joint small game and how to prepare fish and locally harvested wild meat ready for cooking over the fire.

USEFUL INFORMATION

This event is suitable for both beginners and seasoned mushroom foragers. The event takes place across multiple sites and participants will need to make their own way to each wild location using their own transport. Full details of meeting point and travel advice will be provided once your booking has been confirmed. Unfortunately these events are not suitable for children/under 18s or pets.

WILD COCKTAILS + WINE TASTING

Each of the dishes you prepare will be paired with carefully selected wines and seasonal wild cocktails created using our own recipes. We’ll talk through the choices whilst you try the drinks and discuss the theory behind pairing drinks with food. Good presentation really adds to our experience of food so we also offer some tips on how to construct the perfect looking dish.
